Cinnamon Pull-Apart Bread

 

Ingredients

       ¼ cup lukewarm water

       2¼ teaspoons dry yeast

       2¾ cups plus 3 tablespoon all-purpose flour, divided

       ½ cup plus ¼ cup granulated sugar

       ½ teaspoon salt

       1/3 cup milk

       5 tablespoons unsalted butter, melted and divided

       1 teaspoon vanilla extract

       2 eggs

       2 teaspoons ground cinnamon

 

How to Prepare

For dough: Place warm water and yeast in a bowl and mix until dissolved.

Let it rest for 5 minutes or until it begins to foam.

In the bowl of a stand mixer, place 2 cups plus 2 tablespoons of flour, ¼ cup of sugar, and salt, and mix well.

In the bowl of yeast mixture, place milk, 3 tablespoons of butter, and vanilla extract, and mix well.

In the bowl of stand mixer, add milk mixture with flour mixture and mix for about 2 minutes.

Add the eggs, one at a time, mixing well after each addition.

Add remaining flour and mix until a smooth dough forms.

Place the dough into a greased bowl and turn once to grease the top.

With a kitchen towel, cover the dough bowl and place in warm place for 1 hour or until doubled in size.

For filling: Mix together the remaining sugar and cinnamon in a small bowl. Set aside.

Place the dough onto a floured surface and turn to coat with flour.

With your hands, gently knead the dough until its smooth and no longer sticky.

With a clean kitchen towel, cover the dough for 5 minutes.

Again, dust the surface with some flour and roll the dough into a 12x20-inch rectangle.

Brush the dough rectangle with remaining melted butter and sprinkle with cinnamon-sugar mixture.

With a pizza cutter, slice the dough into 6 equal-sized strips vertically.

Stack the dough strips on top of one another and again cut into six equal-sized stacks.
