Zucchini & Orange Bread

 

Ingredients

       3 cups all-purpose flour

       1 cup brown sugar

       3 tablespoons flaxseeds

       ½ teaspoon arrowroot powder

       1 teaspoon baking soda

       ½ teaspoon baking powder

       2 teaspoons ground cinnamon

       1 teaspoon salt

       1 cup white sugar

       1 cup unsweetened applesauce

       ¾ cup canola oil

       2 teaspoons pure vanilla extract

       2½ cups zucchini, shredded and squeezed

       2 teaspoons orange zest, grated finely

 

How to Prepare

Preheat your oven to 325ºF.

Grease and flour 2 (9x5-inch) bread loaf pans.

Place flour, brown sugar, flaxseeds, arrowroot powder, baking soda, baking powder, cinnamon, and salt, and mix well.

In a separate bowl, place oil, white sugar, applesauce, and vanilla extract, and beat until well combined.

Add oil mixture into the bowl with flour mixture and mix until well combined.

Gently, fold in zucchini and orange zest.

Place the mixture into both prepared bread loaf pans evenly.

Bake for approximately 70 minutes or until a wooden skewer inserted in the center comes out clean.

Remove the bread pans from the oven and place onto a wire rack to cool for about 15 minutes.

Now, invert each bread onto the wire rack to cool completely before slicing.

With a sharp knife, cut each bread loaf into desired-sized slices and serve.

Cooking time: 1 hour 10 minutes
