2½ cups mangoes, peeled, pitted, and chopped

How to Prepare
Preheat your oven to 350ºF.
Grease a bread loaf pan.
Place flour, sugar, baking soda, cinnamon, and salt in a bowl and mix well.
In a separate bowl, place oil, eggs, and lemon juice, and beat until well combined.
In the bowl of egg mixture, add flour mixture and mix until well combined.
Gently, fold in mango pieces and raisins.
Place the bread mixture into the prepared loaf pan evenly.
Bake for approximately 1 hour or until a wooden skewer inserted in the center comes out clean.
Remove the bread pan from the oven and place onto a wire rack to cool for about 15 minutes.
Now, invert the bread onto the wire rack to cool completely before slicing.
With a sharp knife, cut the bread loaf into desired-sized slices and serve.
