How to Prepare
Preheat your oven to 350ºF.
Grease a bread loaf pan.
Place flour, baking soda, and salt in a bowl and mix well.
In a separate bowl, place cream cheese, sugar, egg, and vanilla extract, and beat until smooth.
In the bowl of egg mixture, add flour mixture and mix until well combined.
Add the sour cream and mix until just combined.
Gently, fold in the crushed pineapple.
Place the bread mixture into the prepared loaf pan evenly.
Bake for approximately 55–60 minutes or until a wooden skewer inserted in the center comes out clean.
Remove the bread pan from the oven and place onto a wire rack to cool for about 15 minutes.
Now, invert the bread onto the wire rack to cool completely before slicing.
With a sharp knife, cut the bread loaf into desired-sized slices and serve.
