Carrot Bread
Ingredients
1½ cups coconut flour
1½ teaspoons baking soda
1 teaspoon baking powder
1½ teaspoons ground cinnamon
¼ teaspoon salt
2 eggs
¾ cup honey
3 tablespoons coconut oil, melted and cooled
1 teaspoon pure vanilla extract
1 cup carrot, peeled and grated
½ cup walnuts, chopped
How to Prepare
Preheat your oven to 375ºF.
Line a bread loaf pan with a lightly greased parchment paper.
Place coconut flour, baking soda, baking powder, cinnamon, and salt in a bowl and mix well.
In a separate bowl, place eggs, honey, oil, and vanilla extract, and beat until well combined.
Add egg mixture into the bowl with flour mixture and mix until well combined.
Gently, fold in carrots and walnuts.
Place the bread mixture into the prepared loaf pan evenly.
Bake for approximately 40–45 minutes or until a wooden skewer inserted in the center comes out clean.
Remove the bread pan from the oven and place onto a wire rack to cool for about 15 minutes.
Now, invert the bread onto the wire rack to cool completely before slicing.
With a sharp knife, cut the bread loaf into desired-sized slices and serve.
