1 cup plums, pitted and chopped
1½ cups plus 1 tablespoon all-purpose flour, divided
¼ teaspoon baking soda
¼ teaspoon salt
1 cup white sugar
½ cup margarine
½ teaspoon vanilla extract
2 eggs
1/3 cup plain Greek yogurt
¼ cup brown sugar
How to Prepare
Preheat your oven to 350ºF.
Grease a 9x5-inch bread loaf pan.
Place plum pieces and 1 tablespoon of flour and toss to coat well. Set aside.
Place remaining flour, baking soda, and salt in a bowl and mix well.
In a separate bowl, place white sugar, margarine, and vanilla extract, and with an electric mixer, beat until light and fluffy.
Add eggs and beat well.
Place flour mixture into the egg mixture, alternating with yogurt and mix until a smooth mixture forms.
Gently, fold in plum pieces.
Place the mixture into the prepared bread loaf pan evenly and sprinkle with brown sugar.
Bake for approximately 45–50 minutes or until a wooden skewer inserted in the center comes out clean.
Remove the bread pan from the oven and place onto a wire rack to cool for about 15 minutes.
Now, invert the bread onto the wire rack to cool completely before slicing.
With a sharp knife, cut the bread loaf into desired-sized slices and serve.
