Coffee Bread
Ingredients
Bread
¼ cup brewed hot coffee
¼ teaspoons liquid stevia
1 cup almond flour
¼ cup coconut flour
1 teaspoon baking powder
¼ teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon ground ginger
¼ teaspoon ground nutmeg
¼ teaspoon salt
½ cup plus 2 tablespoons butter, softened
¾ cup erythritol
3 eggs
Frosting
2 ounces cream cheese, softened
1 tablespoon butter, softened
½ cup powdered erythritol
1 tablespoon heavy cream
1 teaspoon vanilla extract
How to Prepare
Preheat your oven to 350ºF.
Grease an 8x4-inch loaf pan.
For bread: In a cup, add the hot coffee and stevia and mix well.
Place flours, baking powder, baking soda, spices, and salt in a bowl and mix well.
In a separate large bowl, add the butter and with an electric mixer, beat until creamy.
Add the erythritol and beat until well combined.
Add the eggs, one at a time, beating well after each addition.
Slowly, add the flour mixture, alternating with the coffee mixtures, mixing continuously until well combined.
Place the mixture into the prepared bread loaf pan evenly and with your hands, press to smooth the top surface.
Bake for approximately 35–40 minutes or until a wooden skewer inserted in the center comes out clean.
Remove the loaf pan from oven and place onto a wire rack to cool for about 10 minutes.
