Multi-Grain Bread
Ingredients
¼ cup rolled oats
¼ cup quinoa
¼ cup sunflower seeds
¼ cup cold water
1 tablespoon active yeast
3 cups warm water
4 cups all-purpose flour
1 cup whole-wheat flour
1 cup rye flour
How to Prepare
Place oats, quinoa, sunflower seeds, rolled oats, and cold water, and mix until well combined.
With a plastic wrap, cover the bowl and set aside at room temperature for 1 hour.
Place yeast and water in a separate large bowl and mix until dissolved completely.
Let it rest for 5 minutes or until it begins to foam.
In the bowl of yeast mixture, add flours and quinoa mixture and mix until well combined.
With a plastic wrap, cover the dough bowl and set aside at room temperature for 2 hours.
Place the dough onto a lightly floured surface and divided into two balls.
Grease 2 loaf pans.
Place 1 dough ball in each prepared loaf pan and set aside, uncovered for 1 hour.
Preheat your oven to 450ºF.
Bake for approximately 25–30 minutes or until a wooden skewer inserted in the center comes out clean.
Remove the loaf pans from the oven and place onto a wire rack to cool for about 10 minutes.
Now, invert each bread onto the wire rack to cool completely before slicing.
With a sharp knife, cut each bread loaf into desired-sized slices and serve.
