Poppy Seed Bread

Ingredients
1½ cups almond flour
½ cup coconut flour
2 teaspoons baking powder
½ cup white sugar
2/3 cup cottage cheese
4 tablespoons butter, melted
4 eggs
3 tablespoons fresh lemon juice
1 teaspoon fresh lemon zest, grated
2 tablespoons poppy seeds
How to Prepare
Preheat your oven to 350ºF.
Generously, grease a bread loaf pan.
Place flours and baking powder in a bowl and mix well.
In a food processor, place sugar, cottage cheese, and butter, and pulse until smooth.
Add flour mixture, eggs, lemon juice, and lemon zest, and pulse until well combined.
Add poppy seeds and pulse until well combined.
Place the bread mixture into the prepared loaf pan evenly.
Bake for approximately 55–65 minutes or until a wooden skewer inserted in the center comes out clean.
Remove the loaf pan from the oven and place onto a wire rack to cool for about 10 minutes.
Now, invert the bread onto the wire rack to cool completely before slicing.
With a sharp knife, cut the bread loaf into desired-sized slices and serve.
