Date & Walnut Bread
Ingredients
2½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 tablespoon ground cinnamon
½ teaspoon salt
2 eggs
2/3 cup vegetable oil
½ cup agave nectar
1 teaspoon vanilla extract
1 cup hot strong black tea
1 cup dates, pitted and chopped
1 cup raisins
¾ cup walnuts, chopped
How to Prepare
Preheat your oven to 350ºF.
Grease a 9x5-inch loaf pan.
Place flour, baking powder, baking soda, cinnamon, and salt in a bowl and mix well.
In another large, place eggs, oil, agave nectar, and vanilla extract, and beat until well combined.
Add the black tea and beat until well combined.
In the bowl of egg mixture, add flour mixture and mix until just combined.
Gently, fold in the dates, raisins, and walnuts.
Place the mixture into the prepared loaf pan.
Bake for approximately 1 hour or until a wooden skewer inserted in the center comes out clean.
Remove the bread pan from the oven and place onto a wire rack to cool for about 10 minutes.
Now, invert the bread onto the wire rack to cool completely before serving.
With a sharp knife, cut the bread loaf in desired-sized slices and serve.
