¼ cup ground chia seeds
¼ teaspoons baking powder
1 tablespoon dried onion flakes
½ tablespoon dried basil, crushed
½ tablespoon dried thyme, crushed

8 eggs
½ cup butter, softened
½ cup zucchini, grated and squeezed
½ cup carrot, peeled, grated, and squeezed
¼ cup sunflower seeds
How to Prepare
Preheat your oven to 350ºF.
Line a loaf pan with lightly, greased parchment paper.
Place coconut flour, chia seeds, baking powder, onion flakes, dried herbs, salt, and black pepper in a bowl and mix well.
In a separate bowl, place eggs and butter and beat until well combined.
Add the flour mixture and mix until well combined.
Gently, fold in zucchini, carrots, and sunflower seeds.
Place the mixture into prepared loaf pan evenly.
Bake for approximately 40 minutes or until a wooden skewer inserted in the center comes out clean.
Remove from the oven and place the loaf pan onto a wire rack to cool for about 10 minutes.
Now, invert the bread onto the wire rack.
With a sharp knife, cut the bread loaf into desired-sized slices and serve warm.
