3 Veggies Bread
Ingredients
1 cup almond flour
1/3 cup coconut flour
2 tablespoons psyllium husks
2 tablespoons pumpkin seeds
2 tablespoons sunflower seeds
2 tablespoons flax seeds
2 tablespoons sesame seeds
2 teaspoons baking powder
1 tablespoon smoked paprika
2 teaspoons ground cumin
Salt, to taste
1 cup pumpkin, peeled, grated, and squeezed
1 large zucchini, grated and squeezed
1 small carrot, peeled, grated, and squeezed
4 extra-large eggs
¼ cup butter, melted
How to Prepare
Preheat your oven to 320ºF.
Grease a large loaf pan.
Place almond meal, coconut flour, psyllium husk, seeds, baking powder, spices, and salt in a bowl and mix well.
In a separate bowl, add remaining ingredients and mix until well combined.
Add the flour mixture and mix until just combined.
Place the bread mixture into the prepared loaf pan evenly.
Bake for approximately 55–70 minutes or until a wooden skewer inserted in the center comes out clean.
Remove the loaf pan from the oven and place onto a wire rack to cool for about 10–15 minutes.
Now, invert the bread onto the wire rack.
With a sharp knife, cut the bread loaf into desired-sized slices and serve warm.
