Spinach Cornbread
Ingredients
1 (8½-ounce) box Jiffy cornbread mix
1 (10-ounce) package frozen spinach, thawed and squeezed
1 onion, chopped finely
4 eggs
6 ounces cottage cheese
¼ cup margarine, melted
½ teaspoon salt
How to Prepare
Preheat your oven to 375ºF.
Lightly, grease a 9x9-inch baking dish.
Place all ingredients in a bowl and mix until well combined.
Bake for approximately 30–50 minutes or until a wooden skewer inserted in the center of bread comes out clean.
Remove the baking dish from the oven and place onto a wire rack to cool for about 5 minutes.
Now, invert the bread onto the wire rack.
With a sharp knife, cut the bread into desired-sized pieces and serve warm.
