Bacon & Jalapeño Bread
Ingredients
4 (1-ounce) thick bacon slices
3 large jalapeño peppers, sliced
½ cup coconut flour
¼ teaspoon baking soda
½ teaspoon salt
6 large eggs
½ cup coconut oil, melted and cooled
¼ cup water
How to Prepare
Preheat your oven to 400ºF.
Lightly, grease a baking sheet.
Place bacon slices and jalapeño slices onto prepared baking sheet in a single layer.
Roast for about 5 minutes per side.
Remove the baking sheet from oven and set aside to cool slightly.
Transfer bacon and jalapeño peppers in a food processor and pulse until chopped roughly.
Place coconut flour, baking soda, and salt in a bowl and mix well.
In a separate bowl, place eggs and oil and beat until well combined.
Add egg mixture into the bowl with flour mixture and mix until well combined.
Gently, fold in bacon and jalapeño peppers.
Place the mixture into the prepared baking dish evenly.
Bake for approximately 40–45 minutes or until a wooden skewer inserted in the center of bread comes out clean.
Remove the baking dish from the oven and place on a wire rack to cool for about 10 minutes.
Now, invert the bread onto the wire rack.
With a sharp knife, cut the bread into desired-sized slices and serve warm.
