Cinnamon Swirl Bread
Ingredients
Cinnamon Mixture
1 tablespoon stevia powder
1 teaspoon ground cinnamon
Bread
2/3 cup almond flour
1/3 cup coconut flour
½ cup erythritol
½ teaspoons xanthan gum
1 teaspoon baking powder
¼ teaspoons stevia powder
½ teaspoons ground cinnamon
½ teaspoons salt
7 large eggs
½ cup butter, melted
3 tablespoons coconut oil, melted
1 teaspoon vanilla extract
How to Prepare
Preheat your oven to 350ºF.
Grease a 9x5-inch loaf pan.
For cinnamon mixture: In a bowl, mix together the stevia and cinnamon. Set aside.
For bread: In a bowl, add the flours, erythritol, xanthan gum, baking powder, cinnamon, and salt, and mix well.
In a food processor, add the eggs, butter, coconut oil, and vanilla extract, and pulse until well combined.
Add the flour mixture and pulse until well combined.
Place about half of the flour mixture into the bowl of the cinnamon mixture and mix until well combined.
Place half of the remaining flour mixture into the prepared loaf pan evenly.
Top with half of the cinnamon mixture, followed by the remaining flour mixture.
